I made this recipe for Thanksgiving breakfast.  We liked it a lot.  I got the recipe from a friend who made hers with bacon instead of sausage.
You can prepare it the night before and bake it in the morning, but i just whipped it up the morning I made it.
4 eggs
1 cup milk,
2 slices of bread, cubed
1 pound cooked and drained sausage (crumbled)
1 teasp. dry mustard ( I didn't have any)
1 cupe (or more) sharp cheddar cheese, grated
salt and pepper
Beat eggs, add milk, bread, meat and cheese.  Pour into a buttered casserole
Bake 45 minutes in a 350 degree oven.

Recipe can be adjusted to fit a 13 x 9 " casserole.. 6 eggs, 2 cup milk, 3 slices of bread.  The meat and cheese stays the same.

Those breakfast casseroles are the bomb when entertaining. And no limits when it comes to the variations. Mushroom & sausage, chicken & asparagus...
